The network of thermal control that we have built over the past century has remade our relationship with food, for better and, in some ways, for worse. The invisible backbone of our food system is a man-made, distributed, and perpetual winter of mechanical refrigeration that we've built for our food to live in. Can we assure that its many benefits outweigh the enormous costs?Nicola Twilley has spent years researching the composition, scope, and impact of the twenty-first century’s global thermal control system, including collaborations with The Center for Land Use Interpretation and a fellowship in Michael Pollan’s Food and Farming Journalism program at UC Berkeley Graduate School of Journalism. Her book on refrigeration, from which this talk is drawn, is due out in 02019 from Penguin Press.
