Chef Morrone at Hog & Rocks

From March 12th through April 16th, chef George Morrone will be cooking every Monday at Hog & Rocks in the Mission.  This series of dinners, also known as “Morrone Mondays,” will be the first time the chef has popped up since Michael Mina’s 20th Anniversary dinner party at the end of last year.

George Morrone is the former founding chef at the popular restaurant Aqua and Michael Mina was his protégé.  He can now be found at Boca Steak & Seafood in Marin County, where he is also the founding chef.

Here are previews of the first two Monday menus (these may be revised):

March 12th:

Bouche – fried oyster (horseradish, lemon marinade), lemon creme fraiche, prosciutto crisp, paper cone

Mushroom, bloomsdale spinach, bacon vin, pickled pearl onion (red wine), turmeric brine

Mussels, cilantro broth, hard chorizo, baguette, chorizo butter/aioli

Five peppercorn pork tender, apple butter, braised red cabbage, parsnip (3 purees)

Creme brûlée or pudding

March 19th:

Ham wrapped oyster, piquillo pepper glissage

Asparagus, pistachio vin, spiced pistachio, ham potato croquette

Pork Short Ribs or roulade of shank, dried fruit quinoa salad, pork mustard demi

Ginger cake and vanilla ice cream
