Lentils of Love

Comfort Food warms the soul. And while these savory selections will surely fill your belly, they don’t have to be bad for your heart.

Take, for example, one of my all-time favorite Comfort Foods: Lentil Soup, a hearty stew of nutritious beans usually accompanied by a middle-eastern flair. There are so many ways to enjoy this delicious dish but it often includes a cornucopia of flavorful vegetables such as carrots, potatoes, parsley, garlic and onions. Add enticing spices like cumin and curry and you’re ready for a feast that’s fit for a king–a fit king at that. Because lentil soup is fulfilling without being fattening, it’s a meal capable of satisfying vegetarians and meateaters alike. Every time I enjoy this sensuous soup I am reminded that you can eat healthfully without having to sacrifice flavor.
