Recipe: Meyer Lemon Ricotta Pancakes

You know what you need to kickstart your day (that is, if your day begins at 9am)? You need some Meyer Lemon Ricotta Pancakes. Inspired by the dish at Rockridge Café, Kim Laidlaw at Bay Area Bites was compelled to whip up a batch of her own. I made them yesterday for brunch and they were both easy to make and delicious.

The recipes calls for:

3 eggs, separated

3 tablespoons sugar

1 pinch kosher salt

Finely grated zest of 1 large Meyer lemon

1 cup homemade ricotta (store-bought works fine)

1/2 cup flour

Jam and/or maple syrup, for serving

These make for a light and airy stack of pancakes. However, if you like your pancakes on the thicker, dryer side then texture on these might not be to your taste.
