2nd Course
uni crème brulee, american sturgeon caviar, tobikko, trout roe, toast
octopus, beets, voudavan, burnt coconut
spigerello, pine nut & ricotta fritter, arugula, caramelized lemon, soubise
twice cooked pork belly, kumquat, peanut, kimchi aioli, mizuna
3rd Course
petite filet mignon- sunchoke, chard, red wine jus
