What: Thanksgiving Dinner at Pacific’s Edge

Seating from 4 p.m. – 8 p.m.

Where: Pacific’s Edge at Hyatt Carmel Highlands 120 Highlands Drive, Carmel

Details:

Thanksgiving Dinner at Pacific’s Edge will feature a fabulous four-course meal with a selection of dishes created by Executive Chef Matt Bolton, highlighting his signature, inventive California Coastal cuisine. The dinner will also feature dessert creations from Pastry Chef Gina Scalla. The spectacular panoramic views offered at Pacific’s Edge afford an incredible view, making this year’s Thanksgiving Dinner celebration incredibly special.

In addition, there will be live music from 6pm- 9pm in Lobos Lounge with Joe Indence playing piano.

Menu Highlights:

First Course

· Cauliflower Velouté curry, marcona almond

· Fig Tart st agur, garden greens, candied pecan, cipollini, aged balsamic

· Brussels Sprout Salad bacon-cider vinaigrette, dry ricotta, red grape

Second Course

· Yellowfin Tuna Tartare house made brioche, jalapeño-lime emulsion, wakame

· Porcini & Sweetbread frisée, crispy shallot, truffle vinaigrette

· Nantucket Bay Scallop persimmon, caramelized fennel, blood orange emulsion

Entrée

· Niman Ranch Natural Ribeye 12 oz prime, cast iron seared, yukon potato gratin haricot vert, red wine jus

· John Dory fennel, fingerling potato, lobster, sea urchin emulsion

· Diestel Farms Turkey yukon potato purée, sage-brioche stuffing, haricot vert, natural jus

· Butternut Squash Ravioli chanterelle, bloomsdale spinach, sage butter, pine nuts

Dessert

· Pumpkin Cheesecake crème fraiche, gingerbread, caramel sauce, toasted pepitas

· Sweet Potato-Pecan Tart maple bourbon ice cream

· Caramelized Apple Tarte Tatin cranberries, apple cider gastrique, vanilla bean ice cream

Pricing: $95 per person, plus tax and 18% gratuity; Children 5-12 years old, $45.00. Children under five years old dine free of charge.
