We’ll start the night off with a tour of Sequoia Sake’s factory, tasting samples from various parts of processing to explore flavor development in sake, and then end our tour with a tasting flight. Next, we’ll learn about chocolate processing by tasting the changes that occur throughout the life of cacao, from fruit to roasted bean to molten chocolate, culminating with a flight of Dandelion Chocolate. After we understand how each product’s flavors were created, we’ll explore our favorite pairings and leave attendees to choose their own favorites by considering how each complements or detracts from the other.
