Sabio On Main to Host Las Positas Vineyards Winemaker Dinner

Sabio on Main in downtown Pleasanton, California will host an $85.00 Las Positas Vineyards chef/winemaker dinner on Thursday, January 28 beginning at 7:00 p.m. Winemaker Brent Amos and another winery representative will be in attendance. Sabio's Executive Chef Francis X. Hogan will prepare the evening's five-course menu. For three of the courses, diners will be able to experience a two-year vertical tasting of the Las Positas Barbera, Tempranillo and Coccineous wines. For an additional charge, pre-releases of select 2013 vintages will also be available (retail/to go) ahead of the normal release date. Advance ticket purchase is required and the price excludes tax and gratuity.

Menu highlights will include Seafood Tostada Trio with Hawaiian Ono Ceviche, Spanish octopus and seared scallop; Sabio’s Crafts with finocchiona giovane, cultured ricotta, sourdough baguette, rosemary brioche, smoked Brussels sprouts, Cara Cara marmalade and spiced almonds; Grilled Venison and Porcini Sausage with charred Highland kale, creamy polenta, Pecorino pepato and caramelized onion jus; Seared BN Ranch Lamb Leg Medallion with butternut squash purée, cocoa-spiced pepitas, grilled kohlrabi, dried cherry and Tempranillo gel, and 12 year balsamic; and Elderflower Buttermilk Panna Cotta.

Sabio opened in August of 2015 and showcases global flavors, with strong influences from the cuisine of Spain. Named for a Spanish king, Alfonso X known as el Sabio who is credited with inventing tapas, Sabio utilizes whole animal butchery and locally sourced sustainable ingredients to create a vibrant menu that celebrates the bounty of Northern California and the Spanish approach to food and drink as cultural and social bonds. The California-centric 70+ bottle wine list with international options focuses on small production local vintages, cult and hard to get offerings, unknown gems and out of the ordinary grapes and regions.

Chef Hogan was most recently at Bluestem Brasserie in San Francisco where he consistently earned 4 star ratings on all the major user review platforms. He is a certified sommelier and has been featured at prestigious culinary venues such as the James Beard House in New York City and CUESA in San Francisco.

The restaurant was designed by Jim Maxwell of Architects II (Gather, Tribune Tavern, Chop Bar, and The Cooperage). The kitchen is visible through an opening surrounded by a rich montage of Spanish inspired tiles. There is ample booth seating, an expansive communal/party table and a side dining area notable for a wall of Spanish themed rose colored tile accents and an undulating barrel stave ceiling evocative of both the surrounding Livermore Valley hillsides and the cooper’s process of raising the barrel. The full bar also features a barrel arched ceiling treatment and a dramatic display wall of wine. There are also two outdoor dining options.

Sabio on Main is located at 501 Main Street, at the corner of Rose Avenue, in the newly constructed Pastime Plaza in Pleasanton, California. The restaurant serves dinner nightly along with brunch on Saturday and Sunday.
