The Owners and Kitchen Crew of Gibson Restaurant invite you into their world for a once-in-a-lifetime opportunity to learn the art of running a restaurant - by actually doing it! Kids will transform themselves into executive chefs and restaurant owners for a week at one of SF's hottest new restaurants - Gibson. Aspiring restaurateurs will learn and do everything it takes to run a restaurant: from building out their very own lunch program and designing menus, to cooking for guests and ringing up clients. The weeklong apprenticeship will culminate in a lunch hour open to the public where apprentices will welcome and cook for guests. Gibson's kitchen crew will teach the basics of cooking in a professional kitchen, from savory plates to desserts to hand-crafted sodas. The kids will even get to prepare staff mealfor the kitchen crew and hotel management. For the more adventurous chefs, an optional butchery course will be available. But that's not it! Throughout the week, youth will work with the kitchen crew to design a lunch program for the restaurant.They'll even learn how to design a successful marketing campaign, replete with a food photographycrash course! They will test and create lunch recipes, design a logo, and write the menu.
The week will also include market trips, where youth will personally meet with purveyorsand learn where their ingredients are from. Inspired by their new farm friends, apprentices will plan out and plant an herb gardenfor the restaurant - right on the roof! At the end of the week, youth apprentices will open their restaurant doors to the publicas they showcase their lunch menu. They'll do it all - from welcoming guests to firing up orders to ringing up the bill. And this is just a taste of what our Apprenticeship Week has in store...
