"On January 23rd, Passalacqua Winery will be featured at Birdsong in San Francisco for a special wine pairing dinner.

With roots in Healdsburg, Passalacqua is known as the wine for the wild, inspired to pair its wine with fresh air, whether enjoying in the outdoors or bringing the outdoors in. From foraging wild mushrooms in the Sonoma hills to hunting wild game, Passalacqua winemaker Jessica Boone takes an unmanipulated approach to winemaking, giving the grapes freedom to taste how they're meant to taste, reflecting the vineyard they came from. Wine made in this way pairs perfectly with other pure expressions of the earth, like wild and fresh foods. At Birdsong, dishes highlight ingredients focused on the Pacific Northwest, such as cold-water shellfish, wild game, berries, and mushrooms. Chef Christopher Bleidorn utilizes old world cooking methods like open fire and smoke, dry-age and fermentation that celebrate each ingredient.
