PABU Izakaya presents an evening with Joto Sake, the artisanal sake portfolio of Kobrand Wine and Spirits, on Monday, May 8. Four brewers from Joto Sake present a special menu of their sake and give guests an opportunity to learn about each brewery and its origins as they visit tables throughout the evening. Featured breweries and brewers include:
Ariyoshi Kato from Fuji Brewery, Yamagata, Japan: Founded in 1778, Fuji Brewery is managed by the 13th generation of the Kato Family. Kato's named their sake "Eiko Fuji," or "Glorious Mount Fuji" in honor of Japan's most beloved symbol.
Niichiro Marumoto from Marumoto Brewery, Okayama, Japan: Founded in 1867 at the base of Chikurin-ji Mountains, known for one of Japan's most prized agricultural regions. The brewery is managed by the sixth generation Marumoto family.
Tsuyoshi Nakao from Nakao Brewery, Hiroshima, Japan: Established in 1871, Nakao Brewery stands in Takehara, a historical city on the coast of the island-studded Inland Sea in Hiroshima. Led by the sixth generation, they have made history in the sake world for two major innovations.
Kotaro Saito from Saiya Brewery, Akita, Japan: Since 1903 Saiya Brewery has followed strict discipline in order to achieve the finest quality. Their sake is a product of the natural reaction of koji rice and yeast that humans cannot imitate.
