Today we see more bars using molecular gastronomy in their drinks and pushing the limits on what a cocktail is. In our class we will talk about the history of where molecular mixology came from. We will also be doing a number of different experiments and teaching you how to incorporate these into your bar at home.
Molecular Mixology will cover making flavored foams for cocktails, as well as airs a much lighter style for topping cocktails and the science behind it. We will also be making cocktail spheres made with sodium alginate using a process called sphereification. How to naturally change colors of a cocktail using special ingredients. Also how to rapidly infuse ingredients into a spirit or cocktail. We will be taking all these techniques and incorporating them into cocktails that you will make in the class.
