Intro to Charcuterie- Sausage Making

at Let's Cook! A recreational cooking school in Santa Cruz (see times)
Learn the craft of sausage making. In this hand's on class, sausage expert Greg Hanle will cover meat selection, preparation and trim, for grinding. We will explore seasoning and proper mixing of the sausage meat along with learning how to handle sausage casings. Each student will get a turn using the sausage maker. We will taste some of the sausage meat we prepared in class and students will get to take home at least one sample of the sausages they've made.

We will also pair the tasting with a hand crafted local hard cider. Come join us!!!
Menu: Sweet Italian, Spicy Chorizo and Breakfast Sausages
We will be using locally raised organic pork for this class.
