Let me reintroduce you to what is America’s food heritage. Starting with California and continuing through The Americas, I highlight native foods and put them into contemporary menus. Most have been important foodstuffs since prehistory.
What’s relative to the contemporary marketplace, is the nutritional value, sustainability, and a world of new, exciting, tastes in these foods. It is my hope and my mission to have you look at our native ingredients first for a healthier diet. After all, these flora and fauna have been around for thousands of years!
