At el Salchichero, It is our passion to provide both food and education regarding local sustainably raised animals. We specialize in meat products created from a chef’s perspective. Using only ingredients from local farmers, we change our recipes as the seasons evolve.
Count on us for hand-cut meats artfully extracted from whole carcasses, house-made pate, fresh and smoked sausages, and assorted smoked and cured meats. Our meats are never frozen and we never use fillers or binders. el Salchichero uses pasture-raised animals from N-A Ranch, Devil's Gulch Ranch, Marin Sun Farm, Claravale Farm, and Ratay Ranch. These ranches believe in sustainable agriculture and treating their animals with the utmost respect.
el Salchichero is proud to use fire-roasted and dried chilies along with other herbs and produce from Lindencroft Farm, a small family-run organic farm in Ben Lomond. We also procure organic herbs and produce from Route One Farm, Dirty Girl Farm and Groundswell Farm. The meat and herbs create great flavors you are sure to enjoy, but make sure you are caught up on the proper cooking methods.
