Pesarattu: Green gram dosa topped with red onions & Upma (thick & dry semolina porridge). Regions: Andhra & Telangana.
Akki Roti: Rice flour with onions, chopped vegetables and grated coconut. Region: Karnataka.
Appam: Rice (cooked + raw) and coconut dosa topped with curried egg. Region: Kerala.
Adai: A multi-lentil protein rich dosa. Region: Tamil Nadu.
The next two dosas are a way of acknowledging two of the biggest ethnic communities in the Bay Area:
Schezwan dosa with Lo Mein noodles.
Avocado dosa with Spanish rice and beans.
