Famed Napa restaurateur Cindy Pawlcyn brings her renowned barbecue to Poggio. She has collaborated with Balesteri for a selection of dishes roasted on Poggio’s wood-fired spiedo (spit) accompanied by Italian accoutrements. Pawlcyn originally joined Mindel as the chef at San Francisco’s MacArthur Park Restaurant, and the two have remained close friends ever since.
