Local, sustainable, and fair – while the elegant boutique restaurant Nightbird celebrates the best of California’s diverse culture and natural landscape, the Swiss pendant, Restaurant Jakob, uses only the best of what the lake Zurich, the seasons and surrounding nature has to provide. One element both chefs particularly care about is the promotion of ethical meat use by cooking the animal from nose to tail. For the festival Zürich meets San Francisco, Kim Alter and Markus Burkhard will put their efforts together and create fresh and delicious meals with local, in-season products.
