Cetrella in Half Moon Bay has reopened after a four-month hiatus and features a new executive chef. Sylvain Montassier's culinary résumé reads like an international guidebook -- he hails from France where he graduated from the culinary academy at Saumur, and has spent time in the kitchens of Restaurant Jean Bardet, Restaurant Michel Gaudin and Georges Blanc in that country. From there, Switzerland (Hotel du Rhone), England (The Waterside Inn and The Savoy), and stateside (Boulevard in San Francisco and Alinea, TRU and Isabella's Estiatorio in Chicago). Look for his progressive French technique -- think fresh, seasonal ingredients in compotes, froths and purées -- to complement pedigreed meats, fresh seafood and artisanal ingredients on Cetrella's spring menu.
