On the last Monday of each month, Cala will host an intimate five course dinner paired with a selection of mezcales led by our Bar Manager Marsilio Gabuardi. This month's dinner will feature Tosba Mezcal with the opportunity to taste some of their unreleased selection of mezcales. Tosba mezcal helped rescue the disappearing mezcal production in the Sierra Juarez region of Oaxca, allowing for new economic opportunities in that region. They contribute to the sustainability of mezcal by using recycled wood that is leftover after the rainy season to roast their agaves, reducing logging in the area. The menu is designed specifically to pair with the unique expression of each mezcal.
