On the last Monday of each month, Cala will host an intimate five course dinner paired with a selection of mezcales led by our Bar Manager Marsilio Gabuardi. This month's dinner will feature Don Amado Mezcal with the opportunity to taste most of their selection of mezcales. Since 2008, Don Amado mezcal remodeled their distillery to become sustainable. Water treatment after distillation is part of their production method. At Don Amado, water that has been used to distill mezcal is then treated to bring PH levels to neutral, this water is taken back to the creek surrounding the distillery without affecting the natural ecosystem. The menu is designed specifically to pair with the unique expression of each mezcal.
