We’re always excited about the Summer Olympics, and this year especially so since they are being held in Brazil, a country known for the sandy beaches of Rio de Janeiro, bikinis and Speedos (or lack thereof), caipirinha, feijoada, açai and guaraná drinks which are now super popular in the US. In this hands-on class we’ll celebrate the Summer Olympics by cooking like athletes, preparing a delicious Brazilian menu. We’ll review recipes together while sipping a Sparkling Caipirinha (the national cocktail of Brazil made with cachaça, sugar and lime) and getting into the Brazilian spirit listening to some samba and bossa nova music. Your Brazilian menu features appetizers including Tilapia Fish Croquettes with Tomato Aioli, Shrimp Pastries with Tomato, Olives and Cilantro, followed by a first course Kale, Avocado, Hearts of Palm and Mango Salad with Pine Nuts, then a main course of Moqueca Bahiana: Halibut Stew with Coconut Milk and Dende Oil accompanied by Cilantro-Lime Rice, and an Olympic torch-worthy sweet finale of Crepes Dulce de Leche.
