For this month's Sunday School, we are taking you on a deep dive into the many traditions, practices and styles of Italian sparkling wine. We will look at different production methods including PetNat, Methode Ancestral, Champenois and Charmat; tour some of the most famous (and unexpected) regions and grape varieties for Italian bubbles and break down the vocabulary and technical terms (en tirage, dosage, autolysis to name just a few) to help make sense of this frothy world.
Sparkling wine accounts for some of the freshest, funky , and most natural wine in the world (C02 is a natural preservative, after all!) as well as the most complex, nuanced and layered. Together, we will examine the many interesting flavours (brioche, reductive, cheesy, 'primary,' mineral) that come from sparkling wine production and investigate what causes them. We will also bravely ask the controversial question, 'Does sparkling wine have terroir?'
