A "Bitter" Brunch with Mark Bitterman

Did you know bitter abounds in nature? It’s actually a defense in the plant world, warding off would-be “munchers.” As humans we identify five specific tastes or flavors; of these bitter is the most controversial in the culinary world. We either love it (think dandelion greens in a leafy salad) or do almost anything to avoid it. In this class, Mark encourages you to take a bite out of the bitter conundrum and expand your flavor profile. We not only learn the history of bitters and taste several bitters from around the globe, we’ll also hand-craft a signature bitter and learn how to wield bitters in the kitchen as both a flavor enhancer and star ingredient.
