Soba Ichi: A New Hand-Cut Japanese Soba Restaurant Set to Open in Oakland

Finding good quality soba can be a struggle, as it is a pretty difficult to master, but we are all excited to see how the guys at Soba Ichi take on the challenge. Christian Geideman, Paul Discoe, Koichi Ishii and Shinichi Washino are opening a new teuchi restaurant, featuring Teuchi Soba, the hand-cut Japanese style of noodle, usually made from buckwheat flour. With limited hours and a simple-yet-solid menu, the restaurant will serve freshly made soba, along with a small menu of appetizers, as well as sake and shochu.

The new West Oakland restaurant will be taking over the former Fuse Box location. Plans for this new lunch spot have been in the works for almost two years now, and now with all the blueprints finally coming together, the restaurant has been causing quite a buzz around the neighborhood. Soba Ichi is scheduled to have their grand opening on Tuesday, June 19.
