Inviting friends over for breakfast is always a nice way to start the day. Throw together some homemade goodness paired with fresh bottomless mimosas, and you’ve got an awesome Saturday.

At a recent breakfast gathering, my friend Beth introduced me to a delicious (and healthy—bonus points) banana-almond-oatmeal pancake recipe which she found on fitsugar.

The complete recipe may seem intimidating from its lengthy list of ingredients, but is really simple. We used one cup of milk to keep the pancakes from becoming too runny; they were on the thicker side but still moist. While the recipe says it yields twelve pancakes, we got ten palm-sized circles. We topped the pancakes with strawberries and whipped cream which sort of negates the health-factor, but is delicious.
