San Francisco’s largest and oldest German restaurant, Schroeder’s, is excited to host an exclusive CollaBREWtive Beer Pairing Dinner with Lagunitas Brewing. Schroeder’s Chef, Chris Borges has created a five course dinner menu to complement Lagunitas array of beers. As part of Ale to Tail event, Chef will introduce the new dishes as Tim Decker from Lagunitas will discuss the beer and brewing process. Diners will enjoy Lagunita’s Aunt Sally Sour Ale paired with summer cucumber gurkensalat with yogurt and trout roe. The acidity in the beer is complimented by the yogurt and offset by the oils of the trout roe. The grassy and hoppy notes pair perfectly with the vegetal cucumbers. Lagunitas Lucky 13 Red Ale will be paired with Chef’s truffle glazed beef short rib “sauerbraten” with corn, caramelized tomato and savoy spinach puree. The inherent sweetness in the Red Ale draws out the caramelization of both the truffle balsamic glaze of the beef and the tomato. Simultaneously, the sourness of the balsamic offers a balancing counterpoint while the earthiness of the truffle and spinach provide a grounding backbone to this full bodied brew. Before dinner, take part in Schroeder’s first-ever Estate Sale as the 123 year old establishment will sell historic remnants of the past that have been a part of this San Francisco institution, beginning at 4pm with special Underberg shots for $2 to celebrate the occasion.
