ABOUT CHEF LUKE KNOX
As executive chef at Charlie Palmer’s Burritt Room, Knox was brought in to completely overhaul the tavern’s menu. Armed with first-hand experience of agriculture (growing up near his uncle’s farm in Nebraska) and 10 years working in high-profile, fine-dining restaurants like Bouchon and Aureole in Las Vegas, this Thomas Keller/Charlie Palmer protégé knows his way around fresh ingredients and how to elevate the Burritt Room + Tavern dining experience using a wide variety of modern techniques coupled with a renewed approach to the modern American tavern menu.
Knox is one of the fastest rising star chefs in San Francisco. He was named to Zagat’s 2013 “30 Under 30” list just a few months after his appointment and, just this week, received a 2016 Rising Stars Award by StarChefs Magazine.

ABOUT BURRITT ROOM + TAVERN
The Burritt Room + Tavern, a speakeasy style destination spot, stealthily hidden inside The Mystic Hotel near Union Square, is under the influence of film noir. Named after Burritt Alley behind its building, where detective Sam Spade's partner Miles Archer was gunned down in the 1941 classic hardboiled crime film "The Maltese Falcon", the distinctive atmospheric vibe shows up in the handcrafted cocktails as well as the tavern’s walled-in and curtained booths that create dark corners for private conversation.
The Burritt Room + Tavern is owned by one of New York's most famous chefs and hospitality entrepreneurs Charlie Palmer, winner of countless restaurant industry awards, such as the James Beard and Michelin. Palmer was an early advocate of farm over factory food. In 1988, he made a landmark commitment to creating dishes featuring regional American ingredients at his sublime three-star Aureole, located in mid-town Manhattan. Palmer brought in Luke Knox as executive chef at Burritt Room + Tavern to integrate Palmer's critically acclaimed signature Progressive American style of rambunctious flavors, unexpected combinations, and artful presentations.
