TRACE Collaborates With Little Green Cyclo Food Truck

TRACE in the W San Francisco is hosting the fifth in a series of “Local Motion” dinners, as Executive Chef Paul Piscopo partners with the team behind the Little Green Cyclo food truck for a collaborative dinner.

Piscopo and Little Green Cyclo will be working together in the kitchen, creating a fun and casual menu that exemplifies the Vietnamese street food the truck is best known for.

Served in a dinner party setting, the event offers several small bites, before guests are seated and enjoy a family-style menu with optional cocktail pairings.  The menu on Tuesday will feature items such as: Duck Spring Roll with Duck Confit, Thai Basil, and Rice Noodles; Pandan Waffle with Crispy Mary’s Chicken; and Roast Pork Belly Bun with Pickled Red Onion for small bites and  Garlic Noodles with Dungeness Crab and Black Garlic; Vietnamese Crepe with Shrimp, Crispy Pork and Gem Lettuce; and Pork Belly Dumpling with Fried Shallot and Porcini Mushroom Broth for the dinner itself.

Piscopo started the monthly dinner series last September and has worked with Hapa SF, The Taco Guys, Bacon Bacon and Brass Knuckles. With the back-and-forth between brick-and-mortar restaurants and food trucks these days, it’s refreshing to see a chef recognize both sides of the equation.
