Kimchi is a fermented cabbage condiment (although you can make it with radishes and greens as well) that is like crack cocaine to those of Korean heritage. Seriously – they are addicts and cannot live without the stuff. It is served with every meal and is as common as a glass of water at any Korean restaurant. But you do not need to hale from the great nation of Korea to enjoy this spicy and delicious dish.
